Curried Chicken Couscous - Serves 4

Narrative for film of making Curried Chicken Couscous

To make this recipe you will need to use these ingredients:

  • 250 grams of couscous.
  • Chicken or vegetable stock cubes.
  • Some spring onions.
  • 5 dried apricots.
  • A quarter cup sultanas.
  • Half a red pepper.
  • A cucumber.
  • 1 or 2 cooked chicken fillets or cooked chicken breasts.
  • 1 teaspoon curry powder.
  • 2 tablespoons of low-fat French dressing.
  • And some mixed salad to have with your couscous.

You will need:

  • Large mixing bowl.
  • A Measuring jug.
  • Some sharp knives.
  • A small spoon, a large spoon and a fork.
  • A colander to wash the salad.
  • Oven gloves.
  • A measuring cup.
  • A red chopping board for chopping meat.
  • And a green chopping board for chopping vegetables.
  • And a plate to cover the large bowl.
Step 1
First put 250 grams of couscous into the large bowl.
Step 2
Next put 1 teaspoon of curry powder into the couscous and mix through thoroughly with a fork.
Step 3
Now put one stock cube into the measuring jug and add 1000ml of boiling water.
Stir the stock cube thoroughly to make sure it has completely dissolved.
Step 4
Next pour the stock into the large bowl so that it covers the couscous.
Step 5
Mix through with a fork and set the bowl aside until all the liquid has been absorbed. This should only take 5 or 10 minutes.
Step 6
In the meantime wash the mixed salad leaves over the sink using the colander to drain the water.
Step 7
Using the green chopping board for vegetables, finely chop up the spring onions.
Cut the ends off the spring onions first.
Step 8
Next, chop up the red pepper.
Remove and throw away the green stalk at the top of the pepper.
Scrape out the seeds from the red pepper and throw them away As well.
Then finely chop the red pepper.
Step 9
Cut up the five dried apricots
Step 10
Then chop up the cucumber.
Step 11
Using the red chopping board for cutting meat, finely chop up the cooked chicken.
Step 12
You are now ready to add all the fruit and vegetables you chopped up to the couscous. Remember to add a quarter cup of dried sultanas at this stage.
Once the fruit and vegetables are in the bowl, use a fork to mix them all together.
Step 13
You can now add the chopped chicken breast.
Step 14
Now mix all the ingredients together. You might find it easier to use a large spoon to do this.
Step 15
When you've mixed all the ingredients together, add two tablespoons of low fat French dressing and again mix through completely.
Step 16
Your dish is now ready, but if you want your curried chicken couscous to be warm, you can cover the bowl with a plate and put it into a microwave oven for two minutes.
Step 17
While the couscous is heating up, put your mixed salad leaves into a bowl so that they’re ready for serving.
Step 18
Use oven gloves to take the bowl out of the microwave oven, as it may be hot.
Step 19
Serve the couscous with some salad on a plate.
